Hirmae is the Japanese word used to describe all flat fish with eyes on the left of the head to make sushi. Of all the flat fish, Turbot is the most highly desired with a delicate and sophisticated flavour accompanied by a meaty succulent texture.
While the meaty texture of Turbot makes for a excellent sashimi fish by itself, the delicate flavour of Turbot is often used as a canvas in Japanese cuisine to host a range of more dominate flavours allowing for exciting rice based combinations.
Kazari Wild Turbot fillets include the slightly crunchy flap muscle (similar to fish roe) of which each fish only yields a small portion. This is considered to be the best part of Turbot and is considered a delicacy with which to make sushi.

All weights are given as ± 10% and should be consumed within two days of delivery. Please note that unlike most fishmongers, our prices are given as ready to eat skinned fillets from which a fish only yield between 30-50% of their whole weight. We may also include a sashimi slice of your chosen fish to bring the fillet up to weight.
Use Turbot at the beginning of your sushi meal so as to best appreciate its delicate flavour. Try soy sauce mixed with citrus fruits or a Masago garnish.
