Did you know that almost all wasabi used in the UK to make sushi is fake? Wasabi pastes commonly used are actually a mix of mustard, horseradish, green colouring and if you're lucky, a little bit of real wasabi. The reason for this is that real wasabi takes between 2-3 years for each root to grow and requires only the most perfect growing conditions.

How to use Fresh Wasabi
We recommend buying 10-15g of fresh wasabi per person. To use wasabi, scrub and clean the hard outer surface, then grate in a circular motion using a fine grater. Gather the grated wasabi into a ball using your hand and leave to oxidise for around 5 minutes for the flavour to develop. Fresh wasabi will loose its flavour after 15 - 20 minutes, so enjoy immediately!
Fresh wasabi should be refrigerated, wrapped in a damp cloth or towel and run under fresh running water every 2-3 days for maximum longevity.
